CAULIFLOWER AND CARROT HUMOUS

SERVES 4 | LECTIN FREE | DAIRY FREE

INGREDIENTS

for the humous

3 medium sized carrots

1/2 medium sized cauliflower

drizzle of olive oil if you want to and can tolerate it

pinch of salt

water

serve with

tortilla wraps and a green salad

INSTRUCTIONS

Preheat the oven to 180 C.

Peel the carrots and cut them into similar sized smallish pieces and place on a baking tray. Add the washed cauliflower florets, halving any that are very large. The cauliflower will cook quicker than the carrots so the pieces can be larger so they are ready at the same time.

Drizzle with olive oil (if you want to) and sprinkle with salt. Cook for approximately 30 mins in the oven until the vegetables are soft and brown on the edges.

When cooked add to a blender, or blend with a hand held blender adding a little water at a time until it makes a humous liek consistency. You can leave it with a texture or you can blend it until it is smooth.

This humous is great served with tortillas and a salad.
